We all know that during the week, it’s tough finding time to sit down and eat breakfast. Many of us are either rushing out the door to get to work or preparing breakfast for our own family. This can make it hard to actually eat a good, health conscious breakfast.
Since I work full time, I struggled with finding a yummy and healthy breakfast alternative that was ready to go when I needed to leave the house for work. Because let’s be honest, who actually takes time to make themselves breakfast in the morning during the week? Well….not me.
Over the past year or so, I’ve come up with a few go-to breakfast ideas that have worked for me. Today, I’ll share one of them in hopes that you have a new breakfast idea to kickstart your week.
- 1/4 cup of oatmeal
- 1/2 cup of almond milk
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 2 tbsp of almond butter (or peanut butter)
- 1 medium banana
- 1/2 cup blueberries
- 1 small mason jar
Mash up the banana really well and scoop into your mason jar. Add the almond milk and stir. Then add the almond butter and stir really well. Toss the rest of the ingredients in the jar and be sure to stir, stir, stir. Once all the ingredients are in your mason jar, pop your lid on, and place in the refrigerator over night. I usually throw some blueberries in a ziplock and stick in the fridge so I can top the oatmeal off with something sweet. The next morning when you’re rushing out the door, grab your oatmeal and blueberries and you are all set. Enjoy!
