I don’t know about you but every night after dinner, my sweet tooth starts kicking in and start rummaging through my pantry to see if there are any cookies lying around. A few weeks ago Chuck and I were both craving something sweet but wanted something healthy at the same time. I scanned through my fridge to find something I could make. I ended up finding apples. Ok. Now what. I can’t just cut up an apple for dessert. I mean, I can, but let’s be honest…who wants just apples?
I ended up creating an easy, delicious, healthy yet savory dessert that we’ve been making every night for the past week. We are loving it!
What healthy desserts are your favorite?
- 1/3 cup of oatmeal
- 1 1/2 tbsp of maple syrup
- 2 tsp vanilla
- 1 tsp cinnamon
- 1 medium apple
- Optional: whipped cream
Heat the oven to 375. Cut your apple into slices and set aside.
In a small bowl, mix together oatmeal, maple syrup, vanilla, and cinnamon. Mix well. In a glass, oven-safe dish, spread the apple slices around. Sprinkle cinnamon on top of the apple slices. Spoon the oatmeal mix onto the apples. Place in the oven for 20 minutes or until apples are fully baked. Remove from the oven and let cool for 10 minutes. Add whipped cream and serve!
