    Happy Tuesday, all! I hope you had a great weekend. We went to Lake Chelan to celebrate my bestie’s birthday and had a blast! Definitely a needed getaway. It was perfect! Now that we’re back to the daily grind, I took some time Sunday and yesterday preparing meals for the week. The meal I ended up cooking last night was this yummy, healthy Sheperd’s pie.  It is super easy, tastes great, and allows for leftovers!     I love sweets around the holidays. In fact, I always eat way too many because they’re always around at the office, at dinners, and parties. It’s become a tradition in our house to make sea salt, chocolate chip cookies every Christmas. Chuck loves them so much, he can eat a plate of them in one sitting. They are his favorite!     I hope everyone had a great Thanksgiving last week. We had such a blessed time with our family. We ate, drank, laughed, and enjoyed each others company. What more could you ask for?     This past weekend was my Dad’s birthday.  The one request he had was to make him a cherry pie, instead of a cake. I thought, seriously, he is probably the only person I know who would want a pie vs. a cake.
